Smoked fried Chicken



Ingredients

750 kg Chicken leg pcs 100 ml Extra Virgin olive oil 10 - 13 garlic cloves 5 water soaked red chillies 8 - 9 red chillies 3 Bay leaves 1 small onion 1 tsp smoked red bell pepper/paprika Sea salt as required 1 lemon juice 1/2 tea spoon dry Parsley leaves 3-4 charcoal chunks 1 tbsp oil 200 gram Curd (without water) coriander leaves (for garnishing)



Recipe

Method:- The Sauce:- Take the red chillies, water soaked red chillies,Oninon, bay leaves, garlic cloves, sea salt, extra virgin olive oil, smoked paprika and lemon juice in a grinder and make a fine paste. The Marination:- Add 80% of the prepared mixture + dry parsley leaves to the chicken leg pieces and mix it properly. Keep aside the remain mixture. Smoke Infusion:- Take a few pieces of wood charcoal and place them on the gas burner and heat them till they are red. Take the burning charcoal pieces in a small bowl and keep the bowl in the bowl of marinated chicken pieces. Pour some olive oil on the charcoals and as soon as they start emitting smoke cover the marination bowl with a lid. Let it smoke for 30 minutes. The Barbeque:- Heat a pan on moderate flame. Place the pieces of the marinated chicken in the pan and heat till brown. Keep turning the pieces of the chicken and make sure they are brown on all sides. Once done keep the chicken pieces aside. The Sauce:- Same fan add little bit of oil and add the remain misture into it. Heat the sauce for 2 min (atleast raw smell go off). Once done wait for 3 min to cold and then add the Curd into it and mix it well. The will will be ready. Smoked fried Chicken is ready to server!!
