For Potato Mix: 3 boiled potatoes 1 chopped green chilli 1 tsp kashmiri lal Mirchi 1/2 cup bread crumbs 1 cup chopped spinach 1 cup of hung curd 1 cup of coriander chopped Salt to taste Oil for frying For the Dip: 1 cup hung curd 1 tbsp chopped fresh coriander 1 tsp powdered sugar 1 tsp kashmiri lal mirch Salt to taste For Outer Crust: Corn starch slurry : 2 tbsp cornstarch + 2tbsp all purpose flour + 4tbsp water ( mix and form into a thin paste ) 1 cup of vermicelli for coating
Procedure to cook: Prepare the nest first . In a bowl, add boiled potatoes & mash them until smooth. Then add finely chopped spinach, salt , kashmiri mirch, bread crumbs & fresh coriander . Divide this mixture into equal parts so that nest are of equal size . As shown in the video for each nest . First, take the mixture & form it into a ball & and eventually, with the help of hands, stretch it out into looking like a nest. Now coat each nest into the slurry & then cover it in vermicelli for the crispy texture . Prepare all the nest & then once the oil is hot enough , fry them on medium heat until light brown . Finally, plate your dish by filling the empty nests with hung curd & fresh coriander .
