Mozzarella Cheese - as required 16. Diced onion and Coriander - as required 17. Lemon wedges For Tacos Al Pastor: Ingredients - Boneless Chicken Thighs - 3, Lemon Wedges, Wheat Tortilla. Marinade: Chipotle chillies in Adobo sauce - 2 Chilli powder - 1 tbsp Vegetable oil - 2 tbsp Garlic - 5-6 cloves Black pepper - 3-4 Salt - as per taste Vinegar - 1 tbsp Oregano - 1 tsp Al Pastor Sauce: 1. Pineapple Juice - 1/2 cup 2. Byadgi and Guntur Chillies - 3-4 chillies each 3. Chipotle Chillies in Adobo Sauce - 1 4. Cumin powder - 1 tsp 5. Salt - as per taste 6. Apple Cider Vinegar - 2 tbsp 7. Sugar - 1 tbsp 8. Oregano - 1tsp Salsa: Diced Pineapple Dice onion Diced tomato, Finely chopped coriander Salt Olive oil Black Pepper Lemon juice
For Quesa Birria Tacos: 1. Boil water and dip the chillies to make them soft. 2. Blend all the ingredients mentioned from 2 to 12 in a fine paste. Use as little water as required. 3. Now, take a heavy bottom pot and put oil in it and mix the above paste. Coom the paste well till it releases the oil and put them chicken in. 4. Now put 750 ml water in the pot, bring it to a boil and let it simmer under the lid for about an hour untile the chicken is tender and consomme is neither too thick nor too watery. 5. Now take out the chicken and shred it into a bowl and add some consomme to it to keep the chicken moist. 6. Take the wheat tortilla and dip it in the oil which is floating on the consomme and place it in a pan. Toast it from both sides. Now put the shredded chicken, Mozzarella cheese and diced onion and coriander in the tortilla and fold it in half. 7. Toast it till the cheese melts and the outside of tortilla is nice and crispy. 8. Take the consomme in a bowl and garnish it with diced onion and coriander. 9. Take the taco, dip it in the consomme, drizzle it with some lemon juice and enjoy!! For Tacos Al Pastor: 1. Prepare the marinade by blending all the ingredients mentioned together 2. Prepare the Al Pastor Sauce by blending all the ingredients mentioned together. 3. Marinate the boneless chicken thighs in the marinade for atleast 2 hours. 4. Now take a grill pan and cook the chicken on both sides until develops and charred flavor and is fully cooked. Let the chicken rest for 10 mins and then dice it. 5. Now put a pan on medium heat and add the Al Pastor Sauce. Now add the diced chicken to it and cook until the sauce has been coated evenly on the chicken. 7. Mix all the ingredients of salsa as mentioned. Do this last as the salsa will release water if prepared in advance. Salsa should always be made just before serving. 8. Take the wheat tortilla, cook it on the pan. 9. Place the chicken in Al Pastor Sauce and Salsa in the tortilla. Drizzle it with the lemon juice using the lemon wedges and enjoy.
